Learn How To Make This Amazing Breakfast For Your Kids.

You may be familiar with the simple, awesome popover. It’s a delightful breakfast treat that you can make in a popover pan or even a regular muffin pan. 

But today my kids and I are going to kick it up a notch by adding some vanilla, sugar and orange zest. If we just stopped there, you’d be in citrusy-popovery heaven, but let’s dream bigger and add vanilla butter to make this a true Orange Dreamsicle Popover experience!

PREP TIME: 10 minutes 
BAKE TIME: 30-35 minutes 

Makes six popovers, or up to 9 smaller ones if a standard muffin pan is used. 

INGREDIENTS:

3 eggs (room temperature) 
1 1/2 cups milk (room temperature) 
1/2 tsp vanilla 
1 1/2 cups all-purpose flour 
1/2 tsp salt 
1 tbsp sugar 
Zest from 1 medium orange 

PREPARATION: 

Preheat oven to 450 degrees with popover pan inside. 

Combine eggs, milk and vanilla and whisk until frothy (30 seconds to 1 minute). 

Add all dry ingredients and orange zest and whisk slowly until mostly incorporated, allowing for some small lumps and preserving as many air bubbles as possible. 

Remove popover pan from the oven, coat with non-stick cooking/baking spray and fill each cup 3/4 full with batter. Place in oven and back for 15 minutes. 

Reduce heat to 350 degrees and bake for another 15-20 minutes, or until popovers have popped up and are golden brown. 

Remove from oven, transfer popovers to wire rack and serve immediately.

You can make this while popovers are baking. 

INGREDIENTS: 

1 stick butter 
1/3 cup powdered sugar 
2 tablespoons vanilla 

PREPARATION:

In mixing bowl, cream butter and powdered sugar together with a fork until fully incorporated. (Congrats — you now have sweet butter!) 

Add vanilla and mix until blended (note not all the vanilla may emulsify into butter; that’s OK). 

Scoop vanilla butter into a serving dish and put in the refrigerator until popovers are served.
